Into the James Bond mystique? If so, check out The Cosmopolitan’s two bars Bond and Vesper (the latter named after Bond’s love interest in Casino Royale). Bond overlooks the Strip and is a performance space for live music and dancing; Vesper features cocktails and channels the 1950s with its glass decanters and rich mahogany furniture.

At Bond, try the Fuji Apple Martini, which fuses fresh Fuji apple puree, lemon juice and house-made Absolute Brooklyn vodka. At Vesper, imbibe on a Fear and Loathing, a combination of gin, Crema de Mezcal, Maraschino liqueur, lemon and pineapple juice, some egg and Bittercube cherry bark bitters.

This outdoor bar boasts some of the best flair bartenders around. Watch bartender Tim “Flippy” Morris balance cups, flip bottles and pour drinks in the most unexpected ways. Live bands also begin performing daily at 1:30 p.m., though a cover charge may apply after 9 p.m.

Walking into The Cosmopolitan’s third signature bar is like finding yourself inside an oversized chandelier. There are three levels and shimmering strands of two million beaded crystals inside.

The Fire Breathing Dragon. It’s a raspberry, lemongrass, Thai-chili libation garnished with a dehydrated raspberry treated with liquid nitrogen. Once the raspberry enters the mouth, it releases smoke.

SoHo Lofts

This little gem in the downtown Arts District is reminiscent of the days of the old speakeasy—if you don’t know about it, you won’t find it. The funky and whimsical interior features floor-to-ceiling bookcases (inspired by Prague’s Strahov Monastery Library), antique couches and, if you look up, you’ll see art on the ceiling.
